Doesn't the iPhone OS already provide a secure free space delete?
No. The iPhone OS provides a device wipe which on older devices wipes out everything on the device so that you need to restore from backup OR on newer devices deletes the encryption key. Secure free space delete overwrites only the items you have deleted and leaves everything else intact so no restore from backup is needed.
Why isn't encruyption good enough?
Because every version of encrypition ever created has been hacked or cracked. Encryption is like locking papers in a drawer, eventually the lock can be picked. Secure delete is like shredding and then burning those same papers. Encryption is a two way process, secure delete is a one way process.
Why isn't protecting my device from unauthorized access good enough?
Because there are people that have authorized access to your device that you may not want to have access to everything that you deleted. Those people could be customs agents of foreign governments, IT staff members, business associates, your spouse, the courts or various others who have a legal right or legitimate need to access your device.
With which standards is the iPhone OS device wipe compliant?
For older devices that's a good question for which there is no answer. For newer devices where device wipe just deletes the encryption key it is compliant with no standards.
